Founded in 1917 (Taisho 6) with investments from sake brewers across Japan, this facility also served as a training institution for sake brewing technicians, and was known as the Saijo Sake Brewing School. Toji (master brewers) who learned sake brewing here are now active in sake breweries throughout Japan.
Fukubijin, brewed with water from the "Beauty Well" by toji who have inherited these traditional techniques, is, as its name suggests, a soft and gentle sake.
The water from the "Beauty Well" is available to the public, and people come to draw it every day.
