Hiroshima Okonomiyaki

Hiroshima's specialty dish is "Hiroshima okonomiyaki."
There are other dishes such as "Kansai okonomiyaki" and "monjayaki (Tokyo)" that involve mixing or topping vegetables and pork on dissolved wheat flour and then grilling it, but Hiroshima okonomiyaki is made using a unique method that is only available in Hiroshima.
First, a dough made from dissolved wheat flour is spread into a thin circle on a large iron plate and cooked. Cabbage, bean sprouts, green onions, and other vegetables are then placed on top and steamed.
Layer soba noodles on top and grill, then spread okonomiyaki sauce on top and sprinkle with nori seaweed to finish.
If you enter the restaurant and sit in front of the hot plate, you can actually see the cooking!
In Hiroshima prefecture, in addition to okonomiyaki based on meat and egg soba, you can enjoy a variety of local "○○yaki" that vary depending on the region, such as okonomiyaki with minced meat, gizzard shad, or even rice!
This okonomiyaki, served in Fuchu City, uses minced beef or pork instead of pork belly, cabbage, and soba noodles. It is fluffy inside and crispy on the outside thanks to the fat from the minced meat.
It is made from Kure's specialty thin udon noodles, folded in half to form a semicircular shape, so that workers building ships at the naval base could quickly eat it during their break. It is served in Kure City.
Based on a simple meat and egg okonomiyaki, it uses rice from Shobara instead of noodles and ponzu sauce instead of okonomiyaki sauce. It is served in Shobara City.
This okonomiyaki is served in Onomichi City and is characterized by the inclusion of gizzard and squid tempura. Many restaurants are particular about the sauce and use their own original recipe.
It is served in Takehara City, a sake-producing region that is home to the Taketsuru Sake Brewery. This okonomiyaki is made by kneading sake lees and sake into the batter and then baking it.
This okonomiyaki is made with spicy Carp Sauce from Mori Brewery, which is headquartered in Miyoshi City and is not available for general sale, and chili noodles made with chili peppers from Egusaemen, also in Miyoshi City.
"Sera no Megumi Yaki," which won the 2012 Hiroshima Teppan Grand Prix, is a dish that perfectly combines the sourness of bright red tomatoes grown in Sera Town, the aroma of shiso leaves, and the richness of cheese.
This type of okonomiyaki was born and is served in Kumano Town. It is made with egg, natto, yam, and other ingredients, and has a fluffy texture that you can enjoy.
This is an okonomiyaki served in Innoshima, Onomichi city. Udon noodles are the norm, and many restaurants stir-fry the noodles with bonito flakes and sauce, and add konjac, dried squid, kamaboko, and chikuwa.
